Everyday Seafood Batter

This is a pretty standard "yellow flour" recipe.  In restaurants, we are able to get corn flour which I have never seen in grocery stores.  If you can find it, you can substitute it for the corn meal unless you enjoy the heavier crunch of corn meal.  Flours are blank slates as far as flavoring food so feel free to try whatever dried seasoning combinations you can dream up.  The same is true for the egg wash.  For fish I'd recommend adding mustard to the egg wash. 
EVERYDAY SEAFOOD BATTER

PREPARATION

FISH FLOUR
1 CUP SELF RISING FLOUR 
1 CUP CORN MEAL
1/4 CUP CORN STARCH
1 TBSP BAKING POWDER
1 TBSP CREOLE SEASONING
1 TBSP GRANULATED GARLIC
1 TBSP GRANULATED ONION
1 TBSP SALT
1 TBSP CAYENNE PEPPER (OR WHATEVER PEPPER YOU PREFER)

EGG WASH
4 EACH EGGS
2 CUP MILK


PREP TIME - 15 MINUTES
